Ingredients
- 2 poached chicken breasts, shredded
- 2 medium carrots, diced
- 2 stalks of celery, diced
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 tablespoons fresh herbs (such as parsley or thyme), chopped
- Salt to taste
- Ground pepper to taste
Instructions
- In a large pot, sauté the onion and garlic until translucent.
- Add diced carrots and celery and cook for a few minutes.
- Pour in the chicken broth and bring to a simmer.
- Add the poached chicken breast, shredded, along with fresh herbs, salt, and pepper.
- Stir well to combine everything.
- Simmer for about 20 minutes until the vegetables are tender.
- Serve hot in bowls, ready to be enjoyed.
