Description

Delicious homemade blueberry protein muffins, perfect for breakfast or a healthy snack, combining the sweetness of blueberries with protein-rich ingredients.


Ingredients

  • 10 oz fresh blueberries
  • 1 cup plain flour
  • 3/4 cup thick Greek yogurt
  • 1/2 cup extra-virgin olive oil
  • 2 tbsp honey
  • 1 large egg
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp pure vanilla extract
  • 1/2 cup vanilla-flavored protein powder


Instructions

  1. Preheat your oven to 360°F (180°C).
  2. In a large mixing bowl, combine the egg, honey, Greek yogurt, vanilla extract, and olive oil. Whisk until smooth.
  3. Add plain flour, protein powder, baking powder, and baking soda. Stir gently to combine, being careful not to overmix.
  4. Fold in the blueberries without crushing them.
  5. Spoon the batter into a lined muffin pan, dividing evenly for 12 muffins.
  6. Bake for 15-20 minutes, or until a toothpick comes out clean.
  7. Let rest in the pan for a few minutes, then transfer to a cooling rack.

Notes

For added sweetness, adjust the honey to taste or consider mixing in nuts or seeds for extra texture.
