Ingredients

  • 1 pound (454 g) ground beef or ground turkey
  • 1 onion, diced
  • 1 green or red bell pepper, diced
  • 1 (28 oz (794 g).) can crushed tomatoes, undrained (stewed tomatoes work too)
  • 1 (15 oz (425 g).) can black or kidney beans, undrained (any of your favorite bean variety will work)
  • 1 (4 oz (113 g).) can chopped green chilies
  • 1 1/2 tablespoons (23 ml) chili powder, more if you prefer
  • 1 tablespoon (15 ml) ground cumin, or to taste
  • 1 to 1 1/2 teaspoons (8 ml) salt, start with 1 teaspoon (5 ml) salt and add more as you’d like
  • 1/4 teaspoon (1 ml) ground pepper, plus more as preferred
  • Optional for garnish: avocado, guacamole, thinly sliced scallions, freshly chopped cilantro, tortilla strips, shredded cheese, sour cream or Greek yogurt

Instructions

  1. Place a large pan on the stove over medium-high heat and brown the ground meat until it’s fully cooked.
  2. While the meat is cooking, toss the onion and bell pepper into a big pot and sauté them until they become tender.
  3. Next, integrate all the remaining ingredients except the meat with the onion and bell pepper mixture, bring it to a boil, then reduce the heat and let it simmer for around 30 minutes.
  4. Just before serving, incorporate the cooked meat into the pot with all other ingredients and give it a good stir.
  5. After 30 minutes, the chili is ready to enjoy, but letting it sit will enhance the flavors even more.
  6. Top with your preferred chili garnishes when serving.

Notes

  • Consider using ground turkey instead of ground beef for a leaner option.
  • Experiment with different beans like pinto or garbanzo for varied texture.
  • Adjust chili powder and cumin amounts to personalize the flavor to your liking.
