Ingredients
- 2 cups Full-Fat Cottage Cheese
- 3 large Eggs
- ½ cup Almond Flour
- ¼ cup Honey or Maple Syrup (or sugar-free alternative)
- 1 teaspoon Vanilla Extract
- 1 teaspoon Lemon Zest
- 1 teaspoon Baking Powder
- 2 cups Mixed Berries (fresh or frozen)
Instructions
- Preheat the oven to 350°F (175°C) and grease an 8×8 or 9×9-inch baking dish.
- Blend the cottage cheese and eggs until smooth and creamy.
- Transfer the mixture to a bowl and mix in the almond flour, sweetener, vanilla, lemon zest, and baking powder.
- Gently fold in the mixed berries.
- Pour the batter into the baking dish, spreading it evenly.
- Bake for 35–40 minutes until golden and the center is set.
- Let cool for 20–30 minutes before slicing.
