Ingredients
- 2 cups tomato puree
- 1 cup cottage cheese
- 1 cup vegetable broth
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried basil
- Salt and pepper to taste
Instructions
- Heat olive oil in a pot over medium heat. Add chopped onion and garlic; sauté until softened.
- Stir in tomato puree, vegetable broth, and dried basil. Bring to a simmer.
- Once simmering, add cottage cheese and stir until well combined and heated through.
- Season with salt and pepper to taste.
- Serve hot.
Notes
For a creamier soup, use a blender to puree a portion of the soup. Garnish with fresh basil or a dollop of cottage cheese.
