Ingredients

  • – 3 pounds (1.4 kg) beef sirloin steak, cut into bite-sized pieces
  • – 2 teaspoons (10 ml) kosher salt
  • – 1 teaspoon (5 ml) black pepper
  • – 1 tablespoon (15 ml) vegetable oil (you may need more)
  • – 1 small sweet onion, thinly sliced
  • – 3 cloves garlic, thinly sliced
  • – 1 cup (240 ml) unsalted beef stock
  • – 1 ounce (28 g) packet au jus gravy mix
  • – 4 tablespoons (60 ml) unsalted butter, thinly sliced


Instructions

  1. Put the bite-sized portions of sirloin steak into a large mixing bowl, sprinkle with kosher salt and black pepper, and mix them well.
  2. Heat up a large frying pan over medium-high heat and add vegetable oil. Once it’s very hot, brown the steak pieces in separate batches. The goal is to sear them for color, not to cook through. Add more oil if needed.
  3. After all the steak pieces are seared, transfer them to a 6-quart slow cooker. Add the thinly sliced sweet onion and garlic, and gently mix everything together.
  4. Pour the unsalted beef stock into the slow cooker. Evenly distribute the au jus gravy mix over the top. Place the thinly sliced unsalted butter on top.
  5. Secure the slow cooker lid and cook on high for 3 to 4 hours, or on low for 6 to 8 hours. Stir the mixture every hour if possible.
  6. Serve the beef bites alongside mashed potatoes, egg noodles, or rice.
