Description

A wholesome and nutritious breakfast bake combining sweet blueberries and zesty lemon, packed with protein and fiber.


Ingredients

  • 1 cup cottage cheese
  • 1 cup rolled oats
  • 2 cups blueberries
  • 1/4 cup honey or maple syrup
  • 1/4 cup lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 eggs


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine cottage cheese, rolled oats, blueberries, honey (or maple syrup), lemon juice, lemon zest, baking powder, salt, and eggs.
  3. Stir until well mixed.
  4. Pour the mixture into a greased baking dish.
  5. Bake for 25-30 minutes or until set and lightly golden on top.
  6. Allow to cool slightly before cutting into squares. Serve warm or at room temperature.

Notes

For a sweeter taste, adjust the amount of honey or maple syrup to your preference. Consider adding a teaspoon of vanilla extract for extra flavor.
