Description

This simplified, one-pot High Protein Lasagna Soup captures all the beloved flavors of traditional lasagna without the hassle of assembly, making it perfect for busy weeknight dinners.


Ingredients

  • 1 lb ground turkey or chicken
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 can (15 oz) crushed tomatoes
  • 2 cups cooked lasagna noodles, broken into pieces
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil for garnish (optional)


Instructions

  1. Brown the ground turkey or chicken in a large pot over medium heat for about 5-7 minutes.
  2. Add the chopped onion and minced garlic; sauté until the onion is translucent, about 3-4 minutes.
  3. Stir in the chicken broth, crushed tomatoes, broken lasagna noodles, dried basil, oregano, salt, and pepper.
  4. Bring to a boil, then lower the heat to let it simmer for 20 minutes.
  5. Stir in the ricotta cheese and half of the shredded mozzarella cheese until melted and incorporated.
  6. Serve hot, garnished with fresh basil and the remaining mozzarella cheese on top.

Notes

For a spicier version, add red pepper flakes while simmering. To maintain noodle texture, store noodles separately if preparing in advance.
