Ingredients
- 1 pound ground turkey or chicken
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups chicken or vegetable broth
- 2 cups uncooked whole wheat pasta (like lasagna noodles broken into pieces)
- 2 cups spinach or kale
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1 tablespoon Italian seasoning
- Salt and pepper to taste
Instructions
- In a large pot, brown the ground turkey or chicken over medium heat until fully cooked.
- Add the diced onion and minced garlic, sautéing for about 3-4 minutes until the onion is translucent.
- Stir in the crushed tomatoes, broth, and Italian seasoning; bring to a simmer.
- Add the broken pasta and cook according to package instructions, usually about 8-10 minutes.
- Once the pasta is tender, add the spinach or kale until wilted.
