Description

A warm and comforting high protein creamy taco soup made with lean ground turkey or chicken, vibrant vegetables, and creamy cheese – perfect for any meal.


Ingredients

  • 1 lb lean ground turkey or chicken
  • 1 tbsp olive oil
  • 1 packet taco seasoning
  • 1 can diced tomatoes
  • 1 can green chilies (optional)
  • 1 can black beans, drained and rinsed
  • 4 cups low-sodium chicken broth
  • 4 oz cream cheese, cubed
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • Salt and pepper to taste


Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the lean ground turkey or chicken, cooking until browned (about 5 to 7 minutes).
  2. Add the taco seasoning, garlic powder, onion powder, cumin, salt, and pepper; stir to coat the meat evenly.
  3. Pour in the diced tomatoes and green chilies (if using), then add the drained and rinsed black beans and low-sodium chicken broth. Stir to combine.
  4. Bring the mixture to a simmer. Once simmering, add the cubed cream cheese and stir until melted and creamy.
  5. Add the shredded cheddar cheese, stirring until melted and smooth. Taste and adjust seasoning if necessary.

Notes

For a vegetarian version, substitute the meat with lentils or quinoa. Garnish with sour cream, cilantro, or lime for extra flavor.
