Description
A warm and comforting high protein creamy taco soup made with lean ground turkey or chicken, vibrant vegetables, and creamy cheese – perfect for any meal.
Ingredients
- 1 lb lean ground turkey or chicken
- 1 tbsp olive oil
- 1 packet taco seasoning
- 1 can diced tomatoes
- 1 can green chilies (optional)
- 1 can black beans, drained and rinsed
- 4 cups low-sodium chicken broth
- 4 oz cream cheese, cubed
- 1 cup shredded cheddar cheese
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the lean ground turkey or chicken, cooking until browned (about 5 to 7 minutes).
- Add the taco seasoning, garlic powder, onion powder, cumin, salt, and pepper; stir to coat the meat evenly.
- Pour in the diced tomatoes and green chilies (if using), then add the drained and rinsed black beans and low-sodium chicken broth. Stir to combine.
- Bring the mixture to a simmer. Once simmering, add the cubed cream cheese and stir until melted and creamy.
- Add the shredded cheddar cheese, stirring until melted and smooth. Taste and adjust seasoning if necessary.
Notes
For a vegetarian version, substitute the meat with lentils or quinoa. Garnish with sour cream, cilantro, or lime for extra flavor.
