Ingredients

  • 1 Rack of Beef (8 bones)
  • 2 tbsp (30 ml) Mustard
  • 1 tbsp (15 ml) Salt
  • 1 tbsp (15 ml) Steak seasoning
  • 1 tbsp (15 ml) Rosemary, fresh minced
  • 1 tbsp (15 ml) Thyme, fresh minced
  • 2 tbsp (30 ml) Canola Oil
  • Finely Minced Parsley, rosemary, and thyme
  • Freshly ground black pepper


Instructions

  1. Set your oven to 400 degrees F to preheat.
  2. Dry the rack of beef thoroughly with a paper towel.
  3. Spread mustard evenly over the beef. Generously sprinkle with salt.
  4. Mix together the steak seasoning, rosemary, and thyme in a small bowl.
  5. Firmly press the spice blend onto the beef, ensuring it covers all surfaces.
  6. Heat a large cast iron skillet on medium-high heat and add canola oil until it begins to smoke lightly.
  7. Carefully lay the beef rack in the hot skillet, searing each side evenly for about 5 to 7 minutes, using long tongs to turn it.
  8. Transfer the skillet to the oven and cook for an additional 25 to 30 minutes, or until a meat thermometer reads 135 degrees F internally.
  9. Take the beef out of the oven and let it sit for 10 minutes to rest.
  10. For serving, cut the beef rack between the bones into individual pieces.
  11. Finish by sprinkling with the finely chopped herb mix and freshly ground black pepper.
