- 1 tablespoon baking powder

- 1 teaspoon ground cinnamon
- 1 large egg (or flax egg for vegan option)
- 1/2 cup milk (dairy-free milk works as well)
- 1 whole fresh pineapple, sliced into rings
- 2 cups vegetable oil (canola or coconut oil)
- 1 tablespoon additional cinnamon and sugar (adjust to liking)
Instructions
- Combine the flour, granulated sugar, baking powder, salt, and ground cinnamon in a large bowl.
- Add the egg and milk, mixing until a smooth batter forms.
- Dredge each pineapple slice in the batter until evenly coated.
- Heat the vegetable oil in a pan or deep fryer until shimmering.
- Fry each battered pineapple slice for 2 to 3 minutes or until golden brown.
- Transfer the fritters to a paper towel-lined plate to drain excess oil.
- Sprinkle the warm fritters with the cinnamon-sugar mixture before serving.
