  • 1 whole fresh pineapple, sliced into rings
  • 2 cups vegetable oil (canola or coconut oil)
  • 1 tablespoon additional cinnamon and sugar (adjust to liking)


Instructions

  1. Combine the flour, granulated sugar, baking powder, salt, and ground cinnamon in a large bowl.
  2. Add the egg and milk, mixing until a smooth batter forms.
  3. Dredge each pineapple slice in the batter until evenly coated.
  4. Heat the vegetable oil in a pan or deep fryer until shimmering.
  5. Fry each battered pineapple slice for 2 to 3 minutes or until golden brown.
