Description

Delightful and fresh veggie rolls filled with crunchy vegetables and accompanied by a rich peanut sauce.


Ingredients

  • 8 rice paper wrappers
  • 1/2 cup shredded red cabbage
  • 1 carrot, julienned
  • 1 cucumber, julienned
  • 1/2 avocado, sliced
  • Fresh mint and cilantro leaves
  • 1/4 cup peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tsp maple syrup


Instructions

  1. Prepare all the ingredients. Shred the cabbage, julienne the carrot and cucumber, and slice the avocado.
  2. Dip the rice paper wrappers in warm water to soften them (15 to 20 seconds).
  3. Lay the softened wrapper on a flat surface. Begin assembling by layering the shredded red cabbage, julienned carrot, julienned cucumber, sliced avocado, and fresh herbs.
  4. Wrap the rice paper tightly around the fillings, tucking in the sides for a compact presentation.
  5. For the peanut sauce, whisk together the peanut butter, soy sauce, lime juice, and maple syrup in a bowl until smooth.
  6. Serve the veggie rolls on a plate alongside the peanut sauce for dipping.

Notes

Store any leftover rolls in an airtight container and consume them within a day for the best taste.
