Delightful and fresh veggie rolls filled with crunchy vegetables and accompanied by a rich peanut sauce.
Ingredients
- 8 rice paper wrappers
- 1/2 cup shredded red cabbage
- 1 carrot, julienned
- 1 cucumber, julienned
- 1/2 avocado, sliced
- Fresh mint and cilantro leaves
- 1/4 cup peanut butter
- 2 tbsp soy sauce
- 1 tbsp lime juice
- 1 tsp maple syrup
Instructions
- Prepare all the ingredients. Shred the cabbage, julienne the carrot and cucumber, and slice the avocado.
- Dip the rice paper wrappers in warm water to soften them (15 to 20 seconds).
- Lay the softened wrapper on a flat surface. Begin assembling by layering the shredded red cabbage, julienned carrot, julienned cucumber, sliced avocado, and fresh herbs.
- Wrap the rice paper tightly around the fillings, tucking in the sides for a compact presentation.
- For the peanut sauce, whisk together the peanut butter, soy sauce, lime juice, and maple syrup in a bowl until smooth.
- Serve the veggie rolls on a plate alongside the peanut sauce for dipping.
Notes
Store any leftover rolls in an airtight container and consume them within a day for the best taste.
