Ingredients
- 2 small onions, finely chopped
- 2 carrots, finely chopped
- 6 small white potatoes, finely chopped
- 1 16-ounce (454 g) bag brown lentils
- 1 15.5-ounce (439 g) can diced tomatoes
- 8 cups (1920 ml) (1.9 liters) vegetable broth
- 1-2 cups (360 ml) finely chopped fresh spinach
- Salt and pepper to taste

- Place all the ingredients, except for the spinach, into a large cooking pot or Dutch oven. Let them simmer on low heat for about 2 hours.
