Ingredients

  • 2 small onions, finely chopped
  • 2 carrots, finely chopped
  • 6 small white potatoes, finely chopped
  • 1 16-ounce (454 g) bag brown lentils
  • 1 15.5-ounce (439 g) can diced tomatoes
  • 8 cups (1920 ml) (1.9 liters) vegetable broth
  • 1-2 cups (360 ml) finely chopped fresh spinach
  • Salt and pepper to taste
