Description

A rich and flavorful slow-cooked beef dish, tender beef chuck roast paired with homemade mashed potatoes and savory gravy.


Ingredients

  • 2 lbs beef chuck roast, trimmed
  • 1 large onion, sliced
  • 2 cups beef broth
  • 1 packet brown gravy mix (about 1 oz)
  • 1 tablespoon Worcestershire sauce
  • 3 cups mashed potatoes, prepared
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • 2 tablespoons cornstarch (optional, for thickening)


Instructions

  1. Season the beef chuck roast liberally with salt, black pepper, and garlic powder.
  2. Slice a large onion into rings and place them at the bottom of the slow cooker.
  3. Lay the beef roast on top of the onions.
  4. In a bowl, whisk together the beef broth, brown gravy mix, and Worcestershire sauce, and pour it over the beef roast and onions.
  5. Cover the slow cooker, set it to low heat, and cook for about 8 hours.
  6. For thicker gravy, remove the beef, whisk in a cornstarch slurry, then return the shredded beef to the gravy.
  7. Serve a generous scoop of mashed potatoes topped with shredded beef and ladled gravy.
