Description

A comforting bowl of soup featuring hearty sausage and the subtle sweetness of cauliflower, perfect for family gatherings or cold days.


Ingredients

  • 1 head of cauliflower, chopped
  • 1 pound of sausage (Italian or your choice), sliced
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 4 cups of chicken or vegetable broth
  • 1 cup of heavy cream
  • Salt and pepper to taste
  • Olive oil
  • Fresh parsley for garnish


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the diced onion and minced garlic, sauté until translucent.
  3. Stir in the sliced sausage and cook until browned.
  4. Add the chopped cauliflower and broth. Bring to a boil, then reduce heat and simmer for about 20 minutes or until the cauliflower is tender.
  5. Use an immersion blender to puree the soup until smooth.
  6. Stir in the heavy cream, and season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley.

Notes

For a lighter option, reduce the cream and add more broth. Feel free to experiment with different types of sausage for varied flavors.
