A comforting bowl of soup featuring hearty sausage and the subtle sweetness of cauliflower, perfect for family gatherings or cold days.
Ingredients
- 1 head of cauliflower, chopped
- 1 pound of sausage (Italian or your choice), sliced
- 1 onion, diced
- 2 garlic cloves, minced
- 4 cups of chicken or vegetable broth
- 1 cup of heavy cream
- Salt and pepper to taste
- Olive oil
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the diced onion and minced garlic, sauté until translucent.
- Stir in the sliced sausage and cook until browned.
- Add the chopped cauliflower and broth. Bring to a boil, then reduce heat and simmer for about 20 minutes or until the cauliflower is tender.
- Use an immersion blender to puree the soup until smooth.
- Stir in the heavy cream, and season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
Notes
For a lighter option, reduce the cream and add more broth. Feel free to experiment with different types of sausage for varied flavors.
