Ingredients
- 1 lb lean ground turkey
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or fresh
- 1 bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1 teaspoon taco seasoning
- Salt and pepper to taste
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- In a large skillet, cook the lean ground turkey over medium heat until browned.
- Stir in the taco seasoning and cook for another minute.
- Add black beans and corn to the skillet, cooking until heated through.
- Meanwhile, prepare the fresh vegetables: dice the bell pepper, halve the cherry tomatoes, and dice the avocado.
- Assemble the taco bowls by dividing the turkey mixture among bowls.
- Top each bowl with bell pepper, cherry tomatoes, avocado, and cilantro.
- Serve with lime wedges on the side.
