Description

A delightful and nutritious dish combining ground turkey, spinach, and cheese stuffed in jumbo shells, baked with marinara sauce and mozzarella.


Ingredients

  • 12 oz jumbo shells
  • 1 lb ground turkey
  • 1 lb ground beef
  • 1/2 onion (diced)
  • 10 oz frozen spinach
  • 15 oz ricotta cheese
  • 9 oz Parmesan Romano cheese blend
  • 1 tbsp Italian seasoning
  • Salt and pepper to taste
  • 48 oz marinara sauce
  • 8 oz fresh mozzarella
  • Fresh parsley for garnish


Instructions

  1. Boil the jumbo shells according to the package instructions. Drain and set aside, covering with a wet paper towel.
  2. In a large skillet over medium heat, brown the ground turkey and beef with the diced onion until no pink remains. Drain any excess fat.
  3. Thaw the spinach in a colander under warm water and press to remove excess moisture.
  4. In a large bowl, mix the Parmesan cheese blend, ricotta cheese, spinach, meat, onions, and salt and pepper.
  5. Take the meat and cheese mixture and gently stuff it into the cooked shells.
  6. Line a large baking pan or two smaller pans with the stuffed shells.
  7. Cover the shells generously with marinara sauce and top with slices of fresh mozzarella.
  8. Bake at 375˚ for about 20-25 minutes or until the cheese melts and the sauce bubbles in the center.
  9. Garnish with fresh parsley before serving.

Notes

For a vegetarian version, swap the turkey and beef for additional vegetables. Adjust the spices to cater to family preferences.
