Description

Warm and comforting Zuppa Toscana Soup made easily in a slow cooker, combining Italian sausage, hearty potatoes, and nutritious kale.


Ingredients

  • 1 lb Italian sausage
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 3 large potatoes, sliced
  • 2 cups kale, chopped
  • Salt and pepper to taste
  • Red pepper flakes (optional)


Instructions

  1. In a slow cooker, add the Italian sausage, onion, and garlic.
  2. Pour in the chicken broth and add the sliced potatoes.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  4. About 30 minutes before serving, stir in the kale and heavy cream.
  5. Season with salt, pepper, and red pepper flakes as desired.
