Description

Delightful healthy muffins made with whole wheat flour and mixed berries, perfect for breakfasts and snacks.


Ingredients

  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup honey or maple syrup
  • 1/2 cup unsweetened applesauce
  • 1/4 cup milk (dairy or non-dairy)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup mixed berries (fresh or frozen)


Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a bowl, mix the flour, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the honey, applesauce, milk, egg, and vanilla.
  4. Combine the wet and dry ingredients until just mixed.
  5. Gently fold in the berries.
  6. Fill the muffin tins about 2/3 full and bake for 15-20 minutes or until a toothpick comes out clean.
  7. Let cool before serving.

Notes

For added flavor, consider including cinnamon or nutmeg. These muffins can also be made gluten-free by substituting the flour.
