Ingredients
- 1 lb lean chicken
- 2 large sweet potatoes
- 3 tablespoons olive oil
- Salt to taste
- Pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon dried rosemary
Instructions
- Preheat the oven to 425°F (220°C).
- Cut the sweet potatoes into cubes and place them on a baking sheet. Drizzle with olive oil and season with salt, pepper, and paprika. Toss to coat evenly.
- Bake sweet potatoes in the oven for about 25-30 minutes or until they become tender.
- While the sweet potatoes are roasting, season the lean chicken with salt, pepper, garlic powder, and rosemary.
- Heat a skillet over medium-high heat and add a little olive oil to prevent sticking.
- Cook the chicken for about 6-7 minutes on each side or until fully cooked, reaching an internal temperature of 165°F.
- Serve the chicken alongside roasted sweet potatoes.
