Description

A nutritious and flavorful weeknight meal featuring lean chicken and caramelized sweet potatoes, enhanced with delicious seasonings.


Ingredients

  • 1 lb lean chicken
  • 2 large sweet potatoes
  • 3 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried rosemary


Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Cut the sweet potatoes into cubes and place them on a baking sheet. Drizzle with olive oil and season with salt, pepper, and paprika. Toss to coat evenly.
  3. Bake sweet potatoes in the oven for about 25-30 minutes or until they become tender.
  4. While the sweet potatoes are roasting, season the lean chicken with salt, pepper, garlic powder, and rosemary.
  5. Heat a skillet over medium-high heat and add a little olive oil to prevent sticking.
  6. Cook the chicken for about 6-7 minutes on each side or until fully cooked, reaching an internal temperature of 165°F.
  7. Serve the chicken alongside roasted sweet potatoes.
