Description

A comforting and nutritious chicken soup filled with fresh vegetables and creamy coconut milk, perfect for cold winter nights.


Ingredients

  • 1 lb cooked and shredded chicken breast
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup diced onion
  • 3 cups chicken broth
  • 1 cup peas
  • 1 cup coconut milk
  • 2 cups cauliflower rice (optional)
  • 2 teaspoons thyme
  • 2 teaspoons garlic powder
  • Salt and pepper to taste
  • Nutritional yeast (optional)


Instructions

  1. Combine the shredded chicken, carrots, celery, onion, and chicken broth in a large pot.
  2. If using an instant pot, cook on high pressure for 10 minutes. For a slow cooker, set on low for 6-8 hours.
  3. Once cooking time is complete, stir in the peas and coconut milk.
  4. Add thyme, garlic powder, and salt and pepper to taste. Include cauliflower rice and nutritional yeast if desired.
  5. Cook for an additional 10 minutes on the stovetop or set your slow cooker to warm.
