Ingredients
- 1 lb cooked and shredded chicken breast
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 cup diced onion
- 3 cups chicken broth
- 1 cup peas
- 1 cup coconut milk
- 2 cups cauliflower rice (optional)
- 2 teaspoons thyme
- 2 teaspoons garlic powder
- Salt and pepper to taste
- Nutritional yeast (optional)
Instructions
- Combine the shredded chicken, carrots, celery, onion, and chicken broth in a large pot.
- If using an instant pot, cook on high pressure for 10 minutes. For a slow cooker, set on low for 6-8 hours.
- Once cooking time is complete, stir in the peas and coconut milk.
- Add thyme, garlic powder, and salt and pepper to taste. Include cauliflower rice and nutritional yeast if desired.
- Cook for an additional 10 minutes on the stovetop or set your slow cooker to warm.
