Description

A delightful healthy banana cake that blends ripe bananas with wholesome ingredients for a moist and satisfying dessert.


Ingredients

  • 3 large ripe bananas (about 1 ½ cups mashed)
  • 1 ½ cups whole wheat flour (or 1 cup whole wheat and ½ cup all-purpose flour)
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg (optional)
  • ¼ teaspoon salt
  • 2 large eggs
  • ¼ cup unsweetened applesauce
  • ¼ cup maple syrup or honey
  • ¼ cup melted coconut oil or light olive oil
  • 1 teaspoon vanilla extract
  • Optional: ½ cup chopped walnuts or pecans
  • Optional: ½ cup dark chocolate chips (70% cacao or higher)
  • Optional: ¼ cup shredded unsweetened coconut


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a 9×5 inch loaf pan or an 8×8 inch square baking pan.
  3. Mash the ripe bananas in a medium bowl until mostly smooth.
  4. Add the eggs, applesauce, maple syrup, melted coconut oil, and vanilla extract to the mashed bananas and whisk until smooth.
  5. Whisk the flour, baking soda, baking powder, cinnamon, nutmeg, and salt in a large bowl.
  6. Pour the wet mixture into the dry ingredients and gently fold until just combined.
  7. If using add-ins, gently fold them into the batter.
  8. Pour the batter into the prepared pan and create a slight well in the center.
  9. Bake for 45-55 minutes for a loaf pan or 30-40 minutes for a square pan. Check for doneness.
  10. Cool in the pan for 10-15 minutes, then invert onto a wire rack to cool completely.

Notes

For best results, use the ripest bananas available. Be careful not to overmix the batter to ensure a light texture.
