Description

A delicious and wholesome banana bread recipe that transforms overly ripe bananas into a comforting treat, perfect for breakfast or snacks.


Ingredients

  • 4 bananas (about 1 1/3 cups, mashed, or 320 grams)
  • 1 large egg
  • 1 tablespoon vanilla extract (15 ml)
  • 3 tablespoons light brown sugar (38 g)
  • 2 tablespoons granulated sugar (25 g)
  • 1 teaspoon ground cinnamon (2.6 g)
  • 1 teaspoon baking powder (4 g)
  • 1 teaspoon baking soda (5 g)
  • 1/2 teaspoon salt (2.5 g)
  • 1 1/2 cups all-purpose flour (180 g)
  • 2 tablespoons unsalted butter, melted (28 g) or applesauce (30 g)


Instructions

  1. Mash the bananas in a mixing bowl until smooth.
  2. Add the egg, vanilla extract, brown sugar, granulated sugar, and ground cinnamon. Stir well to combine.
  3. Combine the dry ingredients in a separate bowl: flour, baking powder, baking soda, and salt.
  4. Gradually add the dry mixture to the banana mixture, stirring gently until just combined.
  5. Fold in the melted butter until smooth.
  6. Pour the batter into a greased loaf pan and spread evenly.
  7. Bake in a preheated oven at 350°F for 35-45 minutes, or until a toothpick comes out clean.
  8. Cool in the pan for 5-10 minutes before transferring to a wire rack to cool completely.
