Ingredients

- 4 tablespoons (60 ml) chili powder* (use mild chili powder, start with 2 tablespoons if using a different brand)
- 2 teaspoons (10 ml) ground cumin
- 1 teaspoon (5 ml) dried oregano
- 1/4 teaspoon (1.25 ml) paprika
- 1/2 teaspoon (2.5 ml) salt, plus more to taste
- 1 (28-ounce) can diced tomatoes or crushed tomatoes
- 1 1/4 cups (300 ml) beef broth
- 2 (15 oz (425 g)) cans dark red kidney beans, rinsed and drained
- 1 (15 oz (425 g)) can pineapple chunks, drained
- For topping: cheese, avocado, tortilla chips, cilantro, sour cream
Instructions
- Heat the olive oil in a large saucepan over medium-high warmth. Add the chopped onion, minced garlic, and chopped red bell pepper, stirring often, and cook for 5-7 minutes.
- Introduce the ground meat, breaking it apart as it cooks until all traces of pink are gone. Sprinkle in the chili powder, ground cumin, dried oregano, paprika, and salt, stirring for about 20 seconds.
- Incorporate the diced tomatoes, beef broth, kidney beans, and pineapple chunks. Increase the heat until boiling, then lower it and let the mixture simmer for 30-45 minutes, allowing the chili to thicken and the flavors to meld. Taste and modify seasonings and salt as needed.
- Top with your choice of garnishes. This recipe serves 6, with each serving being approximately 1 1/2 cups.
