Description
A nutritious twist on classic banana bread made with ripe bananas, oat flour, and chocolate chips.
Ingredients
- 3 spotty bananas
- 2 eggs
- 2 cups oat flour
- 1/2 cup coconut sugar
- 1/4 cup avocado oil
- 1/4 tsp sea salt
- 1 tsp baking soda
- A few shakes of cinnamon
- Chocolate chips for the batter and topping
Instructions
- Mash the bananas with a fork in a large bowl until smooth.
- Add the eggs, oat flour, coconut sugar, avocado oil, sea salt, baking soda, and cinnamon to the bowl. Mix until well combined.
- Stir in chocolate chips, reserving some to sprinkle on top of the batter.
- Pour the mixture into the prepared loaf pan and top with the remaining chocolate chips.
- Bake for 50-55 minutes or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
- Slice and enjoy!
Notes
For best results, use very ripe bananas and let the batter sit for 10 minutes before baking. Store in an airtight container at room temperature for up to three days or freeze for up to three months.
