Ingredients
2 lb (907 g) s 93% ground beef
1/2 cup (120 ml) grated carrots
1/2 cup (120 ml) chopped scallions
1 tsp (5 ml) fresh grated ginger
1 tbsp (15 ml) reduced sodium soy sauce
1 tsp (5 ml) sriracha sauce, or more if you like it spicy
8 slices fresh pineapple
8 whole wheat 100 calorie buns, I used Martin’s
8 lettuce leaves
1/2 tbsp (8 ml) cornstarch
1/4 cup (60 ml) cold water
1/4 cup (60 ml) low sodium soy sauce
1/2 cup (120 ml) pineapple juice
3 tbsp (45 ml) brown sugar
1/2 teaspoon (3 ml) fresh grated ginger, very fine
1 small garlic clove, minced
Instructions
1. Carefully mix the 93% ground beef with grated carrots, chopped scallions, fresh grated ginger, reduced sodium soy sauce, and sriracha sauce.
2. Shape the mixture into 8 patties of equal size, avoiding overmixing to keep the meat tender.
3. Dissolve the cornstarch in cold water and set it aside for later use.
4. In a small saucepan, stir together low sodium soy sauce, pineapple juice, brown sugar, finely grated ginger, and minced garlic. Heat this mixture over medium-low heat, bringing it to a boil, then let it simmer until the sauce thickens, approximately 15 to 18 minutes.
5. Pour in the cornstarch mixture and continue to simmer until the sauce becomes thick, around 2 more minutes. Remove from the heat and let it cool.
6. Prepare the grill by heating it up. Once hot, clean the grates and apply a spray of oil.
7. Place the beef patties on the grill and cook on high heat for roughly 5 to 7 minutes per side, or until they reach your preferred level of doneness.
8. As the patties are cooking, grill the fresh pineapple slices for about 2 to 3 minutes on each side.
9. To assemble, lay a lettuce leaf on the bottom half of each whole wheat bun. Place the cooked beef patty on top, add 1 tablespoon of teriyaki sauce, and finish with a slice of grilled pineapple.
Notes
1. For an extra layer of flavor, marinate the beef patties in the teriyaki sauce for a few hours before grilling.
2. Substitute scallions with pineapple for a sweeter patty variation.
3. Store leftover patties and pineapple separately in airtight containers for up to 3 days in the refrigerator.
