Description

A simple, healthy meal combining lean ground turkey and fresh zucchini, perfect for busy weeknights and packed with flavor.


Ingredients

  • 1 pound ground turkey
  • 2 medium zucchinis
  • 1 tablespoon olive oil
  • 1/2 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 cup chicken broth
  • 1/4 cup grated Parmesan cheese


Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and sauté until soft and translucent, about 3-4 minutes.
  3. Add minced garlic and cook for another 30 seconds.
  4. Crumble the ground turkey into the skillet and cook for 6-8 minutes, stirring occasionally, until browned.
  5. Wash, trim, and slice the zucchinis into half-moon shapes.
  6. Add zucchini to the skillet and cook for 4-5 minutes until it starts to soften.
  7. Season with oregano, salt, black pepper, and red pepper flakes.
  8. Pour in the chicken broth and stir to combine.
  9. Reduce heat to low and simmer for 3-4 minutes.
  10. Sprinkle Parmesan cheese over the mixture, stirring until melted and well combined.
  11. Taste and adjust seasoning if necessary.
  12. Serve immediately, garnished with extra Parmesan if desired.

Notes

For added flavor, consider mixing in diced bell peppers or spinach. A squeeze of lemon before serving brightens the dish.
