Description

A comforting and healthy casserole combining ground turkey, zucchini, and mozzarella cheese, perfect for family dinners.


Ingredients

  • 1 lb ground turkey
  • 2 medium zucchinis, sliced
  • ½ cup chopped onion
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes, drained
  • 1 cup shredded mozzarella cheese
  • 1 tsp dried Italian herbs
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Grease a 9×13-inch baking dish with olive oil to prevent sticking and help with even cooking.
  3. In a large skillet over medium heat, add olive oil and sauté the chopped onion and minced garlic until fragrant and softened, about 2 minutes.
  4. Add the ground turkey to the skillet and cook until browned, about 5-6 minutes.
  5. Stir in the drained diced tomatoes, dried Italian herbs, salt, and black pepper. Allow the mixture to simmer for 3-4 minutes.
  6. Place half of the sliced zucchini in the baking dish as the first layer. Top with half of the turkey mixture followed by half of the shredded mozzarella cheese. Repeat the layers with the remaining zucchini, turkey mixture, and cheese.
  7. Bake the casserole uncovered for 30-35 minutes, or until bubbly and the cheese is golden brown.
  8. Let it cool for 5 minutes before serving.

Notes

For an elegant touch, consider making zucchini ribbons and letting the casserole rest for easier serving.
