A hearty and nutritious casserole featuring lean ground turkey and sweet potatoes, perfect for a family gathering or a cozy night in.
Ingredients
- 1 lb lean ground turkey
- 2 medium sweet potatoes (about 2 cups, cubed)
- 1 medium onion (diced)
- 2 cloves garlic (minced)
- 1 bell pepper (diced)
- 2 cups fresh spinach or kale
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 2 tsp olive oil
- Salt and pepper to taste
- 1 tsp paprika
- 1 tsp dried thyme
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, heat the olive oil.
- Add the ground turkey, season with salt, pepper, paprika, and thyme, and cook until browned (about 5–7 minutes).
- Add the diced onion and bell pepper to the skillet and cook until softened (about 5 minutes).
- Stir in the spinach or kale until wilted.
- In a mixing bowl, combine the turkey-veggie mixture with cubed sweet potatoes and toss well.
- Transfer to a greased baking dish, top with cheddar and mozzarella cheese, and bake for 25–30 minutes until bubbly and golden.
Notes
Let any leftovers cool completely before covering and refrigerating. For a creamier casserole, consider mixing in cream cheese or sour cream.
