Description

A hearty and nutritious casserole featuring lean ground turkey and sweet potatoes, perfect for a family gathering or a cozy night in.


Ingredients

  • 1 lb lean ground turkey
  • 2 medium sweet potatoes (about 2 cups, cubed)
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 1 bell pepper (diced)
  • 2 cups fresh spinach or kale
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 tsp olive oil
  • Salt and pepper to taste
  • 1 tsp paprika
  • 1 tsp dried thyme


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, heat the olive oil.
  3. Add the ground turkey, season with salt, pepper, paprika, and thyme, and cook until browned (about 5–7 minutes).
  4. Add the diced onion and bell pepper to the skillet and cook until softened (about 5 minutes).
  5. Stir in the spinach or kale until wilted.
  6. In a mixing bowl, combine the turkey-veggie mixture with cubed sweet potatoes and toss well.
  7. Transfer to a greased baking dish, top with cheddar and mozzarella cheese, and bake for 25–30 minutes until bubbly and golden.

Notes

Let any leftovers cool completely before covering and refrigerating. For a creamier casserole, consider mixing in cream cheese or sour cream.
