Description

A quick and nutritious skillet meal featuring ground turkey, zucchini, black beans, and tomatoes, perfect for busy weeknights.


Ingredients

  • 1 pound ground turkey
  • 2 medium zucchinis, diced
  • 1 can black beans, drained and rinsed
  • 2 cups diced tomatoes (canned or fresh)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil for cooking


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and minced garlic, sauté until translucent.
  3. Add ground turkey to the skillet, cooking until browned.
  4. Stir in diced zucchini and cook for about 5 minutes.
  5. Add black beans and tomatoes, along with chili powder, cumin, salt, and pepper.
  6. Simmer for 10-15 minutes, stirring occasionally, until everything is heated through.
