Ingredients
- 1 pound ground turkey
- 2 medium zucchinis, diced
- 1 can black beans, drained and rinsed
- 2 cups diced tomatoes (canned or fresh)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and minced garlic, sauté until translucent.
- Add ground turkey to the skillet, cooking until browned.
- Stir in diced zucchini and cook for about 5 minutes.
- Add black beans and tomatoes, along with chili powder, cumin, salt, and pepper.
- Simmer for 10-15 minutes, stirring occasionally, until everything is heated through.
- Serve warm.
Notes
For extra flavor, use fresh tomatoes when in season and feel free to add other vegetables like bell peppers or spinach.
