Description

A quick and healthy dish featuring ground turkey and vibrant bell peppers, perfect for tacos, rice bowls, or lettuce wraps.


Ingredients

  • 1 pound ground turkey
  • 2 bell peppers, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Cooked rice, lettuce wraps, or taco shells for serving


Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the diced onion and bell peppers, and sauté until they start to soften, about 5 minutes.
  3. Add the minced garlic and cook for an additional 1 minute.
  4. Push the vegetables to the side of the skillet and add the ground turkey. Cook until browned and cooked through, breaking it apart with a spoon as it cooks.
  5. Stir in the paprika, cumin, salt, and pepper, mixing well with the turkey and vegetables.
  6. Serve over rice, in lettuce wraps, or as a taco filling.

Notes

For extra crunch, consider adding sliced jalapeños during the cooking process. Leftovers can be used in breakfast burritos or grain bowls.
