Description

A quick and colorful weeknight dinner featuring ground turkey and vibrant bell peppers, providing a nutritious and flavorful meal.


Ingredients

  • 1 lb ground turkey
  • 3 bell peppers (red, yellow, green), sliced
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 tablespoon olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon tomato paste
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish (optional)


Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced onion and cook for 2 minutes, then add the minced garlic and sauté for another 30 seconds.
  3. Add the ground turkey and cook until browned and no longer pink, breaking it up as it cooks.
  4. Stir in the sliced bell peppers and cook for another 5 minutes until tender-crisp.
  5. Add the tomato paste, soy sauce, paprika, salt, and pepper, stirring to coat evenly.
  6. Simmer for 2-3 minutes, then remove from heat and garnish with parsley if desired.

Notes

For extra flavor, consider adding chili powder or cumin. This dish stores well for leftovers.
