Ingredients
- 1 lb ground beef
- 2 medium zucchinis, sliced into half-moons
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Preheat your oven to 350°F (175°C).
- Heat olive oil in a large skillet over medium heat; add the chopped onion and minced garlic, sauté until soft.
- Add the ground beef to the skillet; season with salt, pepper, and Italian seasoning, cooking until browned.
- Stir in the sliced zucchini, cooking for an additional 5 minutes until slightly softened.
- Transfer the beef and zucchini mixture to a greased casserole dish and sprinkle shredded cheese on top.
- Bake for 20-25 minutes until the cheese is bubbly and golden brown.
Notes
For a crispier top, consider broiling for a few minutes at the end of cooking. Ensure zucchini does not overcook to avoid a mushy texture.
