Description

A comforting and hearty ground beef and zucchini casserole, perfect for family dinners and busy weeknights.


Ingredients

  • 1 lb ground beef
  • 2 medium zucchinis, sliced into half-moons
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Olive oil for sautéing


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat olive oil in a large skillet over medium heat; add the chopped onion and minced garlic, sauté until soft.
  3. Add the ground beef to the skillet; season with salt, pepper, and Italian seasoning, cooking until browned.
  4. Stir in the sliced zucchini, cooking for an additional 5 minutes until slightly softened.
  5. Transfer the beef and zucchini mixture to a greased casserole dish and sprinkle shredded cheese on top.
  6. Bake for 20-25 minutes until the cheese is bubbly and golden brown.
