Ingredients

  • cooking spray
  • 1 tbsp (15 ml) vegetable oil
  • 1 onion, chopped
  • 1 pound (450 g) lean ground beef
  • 1 tsp (5 ml) dried basil
  • 1 cup (240 ml) green beans
  • 1 cup (240 ml) tomatoes, diced
  • 1 clove garlic, minced
  • 2 potatoes, cooked and mashed
  • 1/2 cup (120 ml) water
  • 1 large egg, beaten
  • 1/4 cup (60 ml) shredded cheese (use a vegetarian cheese alternative)

Instructions

  1. Collect all necessary items.
  2. Set your oven to 350°F (175°C) and lightly coat a 2-quart baking dish with cooking spray.
  3. Warm the oil in a large pan over medium heat. Sauté the chopped onion until it becomes translucent, roughly 5 minutes.
  4. Incorporate the ground beef and basil into the pan. Stir and cook until the beef is browned and crumbly, approximately 5 minutes.
  5. Stir in the green beans, diced tomatoes, and minced garlic; continue cooking until the beans become slightly tender, about another 5 minutes.
  6. Move the mixture into the greased baking dish.
  7. In a medium bowl, combine the mashed potatoes, water, and beaten egg until smooth. Spread this mixture evenly over the beef layer.
  8. Place in the preheated oven and bake until the potato topping starts to turn golden, about 15 to 20 minutes.
  9. Top with cheese and bake for an additional 5 minutes, or until the cheese is fully melted.
  10. Serve and relish the dish!

Notes

  • Consider using lean ground turkey or chicken for a healthier twist.
  • Add bell peppers or carrots to boost the nutritional value.
  • Enhance the flavor by incorporating paprika or cumin into the beef mixture.
