Ingredients

  • 3/4 cup tomato sauce (180 ml)
  • 3/4 cup packed brown sugar (180 g)
  • 1 teaspoon (5 ml) salt
  • 1 1/3 pounds grass-fed ground beef (600 g)
  • 1 1/3 cups bread crumbs (160 g)
  • 1 small yellow onion, chopped (100 g)
  • 1 green bell pepper, chopped (120 g)
  • 2 eggs
  • 1/4 cup vegetable oil (60 ml)


Instructions

  1. Preheat your oven to 350°F (175°C) and lightly coat a loaf pan with a non-stick spray.
  2. In a small bowl, mix together tomato sauce, brown sugar, and salt, then let it sit for a few minutes until the sugar dissolves.
  3. Pour a third of a cup of the sauce into the bottom of the loaf pan and set it aside.
  4. In a food processor, combine the ground beef, bread crumbs, onion, bell pepper, eggs, vegetable oil, and a third of a cup of the sauce mixture, and blend until everything is well mixed.
  5. Transfer the meat mixture into the prepared loaf pan and even out the surface.
  6. Spread the remaining sauce over the top of the meatloaf and bake in the oven for about an hour or until the internal temperature reaches 155°F to 160°F (68°C to 71°C).
  7. Take it out of the oven and let it sit for 10 minutes before slicing and serving.

Notes

  • Consider using lean ground beef or turkey instead of grass-fed ground beef for a healthier option.
  • Add a touch of Worcestershire sauce to the meat mixture for enhanced flavor depth.
  • For a sweeter glaze, increase the brown sugar amount in the sauce mixture.
