Ingredients
- 1 lb lean ground beef (93%)
- 2 medium sweet potatoes, peeled and diced
- 1 sliced avocado
- 1 cup cottage cheese
- 1 diced yellow onion
- 2 tbsp olive oil
- 1 packet taco seasoning (or 2 tbsp)
- 2 tbsp hot honey
- ½ tsp paprika
- ½ tsp garlic powder
- ¼ tsp ground cinnamon
- Salt and pepper, to taste
- Optional: chopped cilantro, red pepper flakes, lime juice
Instructions
- Preheat the oven to 400°F (200°C).
- Toss diced sweet potatoes with 1 tbsp olive oil, paprika, garlic powder, cinnamon, salt, and pepper.
- Roast for 40–45 minutes, stirring halfway for even cooking.
- Heat 1 tbsp olive oil in a skillet over medium heat.
- Sauté diced onion until soft, about 3–4 minutes.
- Add ground beef to the skillet, breaking apart and cooking for 6–8 minutes.
- Stir in taco seasoning, salt, and pepper, cooking until browned.
- Assemble bowls by layering roasted sweet potatoes at the bottom, followed by ground beef, avocado slices, and a scoop of cottage cheese.
- Drizzle hot honey generously over each bowl, adding optional garnishes if desired.
- Serve immediately and enjoy while warm.
Notes
For crispy sweet potatoes, avoid overcrowding on the baking sheet. Customize with your favorite spices or toppings.
