Description

A comforting dish of ground beef enchiladas that evokes nostalgia and brings families together.


Ingredients

  • 1 lb lean ground beef
  • 8 flour or corn tortillas
  • 2 cups enchilada sauce
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Sour cream (for topping)


Instructions

  1. Brown the ground beef and diced onions in a skillet over medium heat for about 5-7 minutes until onions are translucent.
  2. Add the minced garlic, cumin, and chili powder to the skillet, and sauté for another minute.
  3. Spoon the beef mixture onto each tortilla and roll tightly, placing seam-side down in a greased baking dish.
  4. Pour enchilada sauce over the tortillas, covering them completely.
  5. Top with shredded cheese and bake in a preheated oven at 375°F (190°C) for 20-25 minutes until bubbly and golden.

Notes

You can freeze the unbaked enchiladas for future use. For added nutrition, consider adding beans or veggies to the beef mixture.
