Ingredients

  • 2 pounds ground beef (900 g)
  • 25 medium onion, finely chopped
  • 25 cups (300 ml) shredded cheddar cheese, divided
  • 5 cup (120 ml) sour cream
  • 1 tablespoon (15 ml) dried parsley
  • 1 tablespoon (15 ml) taco seasoning
  • 1 teaspoon (5 ml) dried oregano
  • 5 teaspoon (3 ml) ground black pepper
  • 5 cups (600 ml) tomato sauce
  • 5 teaspoons (8 ml) chili powder
  • 1 clove garlic, minced
  • 5 teaspoon (3 ml) salt
  • 8 flour tortillas
  • 1 (15 ounce (425 g)) can black beans, rinsed and drained
  • 1 (4 ounce (113 g)) can sliced black olives, drained


Instructions

  1. Start by assembling your ingredients and setting your oven to 350 degrees F (175 degrees C).
  2. Place a large pan over medium-high heat. Add the ground beef and onion, cooking and stirring until the beef is browned and crumbly, about 5 to 7 minutes. Remove excess fat and discard.
  3. Combine 1 cup of cheddar cheese, sour cream, parsley, taco seasoning, oregano, and black pepper with the beef mixture until the cheese is melted. Add tomato sauce, chili powder, garlic, and salt to the mixture; bring it to a boil, then lower the heat and let it simmer until the sauce thickens slightly, roughly 5 minutes.
  4. Position a tortilla on a flat surface and place about 1/4 cup of the meat mixture down the center. Add 1 tablespoon of black beans and a sprinkle of black olives on top of the meat. Roll the tortilla to enclose the filling and position it seam-side down in a 9×13-inch baking pan. Repeat the process with the rest of the tortillas.
  5. Pour any leftover meat mixture over the rolled tortillas. Sprinkle any remaining black beans and black olives on top, followed by the remaining 1/4 cup of cheddar cheese.
  6. Place the baking dish in the oven and cook until the cheese is melted and the sauce is bubbling, about 20 to 22 minutes. Allow it to rest for 5 minutes before serving.
  7. Serve warm and enjoy your meal!
