Ingredients

  • 12 ounces jumbo pasta shells (about 20-24 shells) (340 g)
  • 1 pound ground beef (454 g)
  • 1/2 cup onion (diced) (120 ml)
  • 4 cloves garlic (minced)
  • 2 cups loosely packed spinach (60 g)
  • 1 teaspoon (5 ml) basil
  • 1 teaspoon (5 ml) garlic powder
  • 1 teaspoon (5 ml) oregano
  • salt+pepper (to taste)
  • 2 cups marinara sauce (480 ml)
  • 1 cups shredded alternative mozzarella cheese (240 g)
  • 1/2 cup (120 ml) shredded alternative cheese (shredded)


Instructions

  1. Set your oven to 400°F to warm up. In a large pot, bring 6 cups of water to a boil and cook the pasta shells until they’re just tender, following the package directions, and add salt for taste.
  2. As the pasta cooks, heat a big skillet. Place the ground beef, onion, and garlic into it and cook without oil for 3-4 minutes until the beef is browned and the onion is soft. Add spinach and spices, cooking until the spinach wilts, about 2 minutes. Mix in about half of the marinara sauce.
  3. Once the shells are done, being careful not to overcook to prevent them from breaking, lay them out in a 13×9 casserole dish or any oven-safe pan. Stuff each shell with approximately 2-3 tablespoons of the beef mixture, then pour the remaining marinara sauce over the shells. Sprinkle with mozzarella and additional shredded cheese, cover with foil, and bake for 15 minutes. Take off the foil and broil for a couple of minutes to get the cheese golden brown, if you like.
