  • 1/2 teaspoon (3 ml) salt
  • 1/2 teaspoon (3 ml) ground cumin
  • 2 tablespoons (30 ml) tomato paste
  • 1 (14.5 ounce) can diced tomatoes (411 g)
  • 1 1/2 cup lower-sodium beef broth (355 ml)
  • 1 (4 ounce) can diced green chiles (113 g)
  • 2 teaspoons (10 ml) Worcestershire sauce
  • 1 cup shredded mozzarella or Monterey jack cheese (113 g)
  • 1 tablespoon (15 ml) chopped green onion or cilantro


Instructions

  1. Collect all necessary items.
  2. In a large, deep pan, cook the ground beef, onion, red bell pepper, and garlic over medium heat. Stir occasionally to crumble the beef until it is no longer pink and the vegetables are soft, roughly 8 minutes. Drain the excess fat.
  3. Add the rice, salt, and cumin to the pan. Stir and cook for 1 minute.
  4. Incorporate the tomato paste into the mixture. Stir and cook for another minute.
  5. Pour in the undrained diced tomatoes, beef broth, diced green chiles, and Worcestershire sauce. Bring the mixture to a boil. Lower the heat, cover the pan, and allow it to simmer until the liquid is absorbed and the rice is cooked, approximately 20 minutes.
  6. Take the pan off the heat. Sprinkle the shredded cheese on top. Cover the pan and let it sit until the cheese has melted, about 5 minutes.
  7. Top with chopped green onion for garnish.
