Ingredients

  • 1 1/2 pounds (680 g) ground beef
  • 1 tsp (5 ml) creole seasoning
  • 1 cup (240 ml) diced onions
  • 1/2 cup (120 ml) diced bell pepper
  • 5 oz (411 g) can cream style corn
  • 1/2 cup (120 ml) corn meal
  • 1/2 cup (120 ml) milk
  • 1 egg
  • 3 tbsp (45 ml) vegetable oil, cubed
  • 1 cup (120 g) shredded Colby Jack
  • 1 tbsp (15 ml) chopped fresh parsley


Instructions

  1. Set your oven to 350°F and lightly coat a 9 x 13 casserole dish with cooking spray.
  2. Cook the ground beef together with the onions and bell peppers in a pan. Add the creole seasoning while cooking.
  3. As the beef is cooking, combine the cornmeal, milk, and egg in a bowl and mix well.
  4. After the beef is cooked through, incorporate the cream-style corn and the cornmeal mixture, stirring swiftly until everything is well mixed. Quickly transfer this mixture into the prepared casserole dish.
  5. Scatter the cubed vegetable oil over the top and bake it for 25 minutes.
  6. Take it out of the oven and sprinkle with shredded cheese and fresh parsley.
