Ingredients
- 1 1/2 pounds (680 g) ground beef
- 1 tsp (5 ml) creole seasoning
- 1 cup (240 ml) diced onions
- 1/2 cup (120 ml) diced bell pepper
- 5 oz (411 g) can cream style corn
- 1/2 cup (120 ml) corn meal
- 1/2 cup (120 ml) milk
- 1 egg
- 3 tbsp (45 ml) vegetable oil, cubed
- 1 cup (120 g) shredded Colby Jack
- 1 tbsp (15 ml) chopped fresh parsley
Instructions
- Set your oven to 350°F and lightly coat a 9 x 13 casserole dish with cooking spray.
- Cook the ground beef together with the onions and bell peppers in a pan. Add the creole seasoning while cooking.
- As the beef is cooking, combine the cornmeal, milk, and egg in a bowl and mix well.
- After the beef is cooked through, incorporate the cream-style corn and the cornmeal mixture, stirring swiftly until everything is well mixed. Quickly transfer this mixture into the prepared casserole dish.
- Scatter the cubed vegetable oil over the top and bake it for 25 minutes.
- Take it out of the oven and sprinkle with shredded cheese and fresh parsley.
