Ingredients

  • 5 lbs (680 g) Ground Beef
  • 2 medium Yellow Onions, diced
  • 2 Red Bell Peppers, diced
  • 1 cup (240 ml) Beef Broth
  • 5 tbsp (23 ml) Hot Sauce
  • 1 tbsp (15 ml) Kosher Salt
  • 1 tbsp (15 ml) Black Pepper
  • 1 tbsp (15 ml) Garlic Powder
  • Empanada Dough Ball for 12-16 Discs
  • 2 cups (200 g) Jack Cheese, shredded
  • 1 cup (240 ml) Green Onions, sliced
  • 1 qt (946 ml) Vegetable Oil
  • Chimichurri for serving


Instructions

  1. Set your grill to a high temperature (approximately 400°F) for direct grilling. Place a cast iron skillet on the grill to heat up about 2 minutes before you start cooking.
  2. Put the diced onions and red bell peppers into the hot skillet. Sauté them for 5-7 minutes until the onions become clear.
  3. After that, pour in the beef broth and let it simmer for an additional 5-7 minutes. Once done, remove the vegetables and set them aside.
  4. Now, place the ground beef into the skillet, adding kosher salt, black pepper, garlic powder, and hot sauce. Cook until the beef is browned and the liquid has evaporated.
  5. Once ready, return the cooked veggies to the skillet and combine them with the meat. Remove the skillet from the heat and transfer the mixture into a bowl.
  6. Cover the bowl and refrigerate the mixture for at least 1-2 hours until it is completely cool.
  7. Take the chilled filling and mix in the green onions and shredded cheese. Stir well until evenly combined.
  8. Lay out an empanada dough disc and place a spoonful of the filling on one half of the disc.
  9. Gently fold the other half over, forming a half-moon shape. Press the edges to seal the empanada, using either a fork to crimp or by twisting the edges.
  10. Repeat this process until all the empanadas are assembled.
  11. Heat vegetable oil in a Dutch oven to 350°F.
  12. When the oil is hot, carefully lower the empanadas into the oil to fry for about 1.5-2 minutes on each side until they are golden brown. Fry in batches if needed.
  13. Once cooked, remove the empanadas and let them rest for 1 minute.
  14. Serve the empanadas with chimichurri on the side and enjoy!
