  • 2 pounds cubed beef stew meat (900 g)
  • 1 onion, chopped
  • 1 (10 ounce) can diced tomatoes with green chile peppers (283 g)
  • 5 cups beef broth (360 ml)
  • 1 (4 ounce) can chopped green chile peppers (113 g)
  • 1 teaspoon (5 ml) garlic salt
  • 1 teaspoon (5 ml) ground cumin
  • salt and ground black pepper to taste
  • 2 large potatoes, peeled and cubed


Instructions

  1. Warm the vegetable oil in a large saucepan over medium heat. Introduce the beef and onion; sauté until the onion becomes see-through, roughly 5 minutes.
  2. Incorporate the diced tomatoes with green chiles, beef broth, and chopped chiles. Blend in the garlic salt and cumin, adjusting with salt and pepper as desired.
  3. Allow the mixture to reach a boil, then lower the heat and let it simmer for an hour. Add extra beef broth or water if necessary while simmering.
  4. Mix in the cubed potatoes and continue to simmer until the potatoes are soft, approximately 30 more minutes.
