Ingredients

- 2 pounds cubed beef stew meat (900 g)
- 1 onion, chopped
- 1 (10 ounce) can diced tomatoes with green chile peppers (283 g)
- 5 cups beef broth (360 ml)
- 1 (4 ounce) can chopped green chile peppers (113 g)
- 1 teaspoon (5 ml) garlic salt
- 1 teaspoon (5 ml) ground cumin
- salt and ground black pepper to taste
- 2 large potatoes, peeled and cubed
Instructions
- Warm the vegetable oil in a large saucepan over medium heat. Introduce the beef and onion; sauté until the onion becomes see-through, roughly 5 minutes.
- Incorporate the diced tomatoes with green chiles, beef broth, and chopped chiles. Blend in the garlic salt and cumin, adjusting with salt and pepper as desired.
- Allow the mixture to reach a boil, then lower the heat and let it simmer for an hour. Add extra beef broth or water if necessary while simmering.
- Mix in the cubed potatoes and continue to simmer until the potatoes are soft, approximately 30 more minutes.
