  • – 2 (113 g) cans diced green chiles
  • – 2/3 cup (160 ml) water
  • – 1 1/2 tablespoons (23 ml) cumin
  • – 1 tablespoon (15 ml) chili powder
  • – 1 teaspoon (5 ml) onion powder
  • – 1 teaspoon (5 ml) garlic powder

  • – Toppings: Monterrey jack cheese, avocado, sour cream

Instructions

  1. Put the pulled chicken, chicken broth, enchilada sauce, diced green chiles, water, cumin, chili powder, onion powder, garlic powder, and beef into the slow cooker on the HIGH setting. Let it simmer for 3-4 hours.
  2. Season with salt and pepper to your liking, then garnish with Monterrey Jack cheese, sour cream, and avocado slices.

Notes

  • Experiment with spiciness levels using hotter enchilada sauce or extra chili powder.
  • Add black beans for more protein and texture.
