Ingredients
- 4 ounces (113g) diced green chiles, divided
- 1/2 cup (120ml) sour cream
- 1/4 cup (15g) cilantro
- 1 small onion, diced
- 1 teaspoon (5ml) vegetable oil
- 1 can pumpkin puree
- 14 ounces (400g) vegetable broth
- 1/2 cup (120ml) water
- 2 teaspoons (10ml) cumin
- 1/2 teaspoon (2.5ml) chili powder
- 1/2 teaspoon (2.5ml) garlic powder
- 1/4 teaspoon (1.25ml) ground red pepper
Instructions
- In a blender, blend half of the chiles with the sour cream and cilantro until the mixture is smooth. Put this aside for later.
- Warm the oil in a large saucepan, then add the onion and the rest of the chiles. Cook for roughly 5 minutes until the onion becomes tender. Stir in the cumin, chili powder, garlic powder, and ground red pepper, and cook for another minute until the spices release their aroma.
- Pour in the remaining ingredients, bring the mixture to a boil, then lower the heat and let it simmer for 15 minutes, stirring from time to time. If you prefer a smoother consistency, you can use an immersion blender, but this step is optional.
- Just before serving, swirl the blended sour cream mixture into the soup.
