Ingredients
- 1 pound (454 g) extra lean ground beef
- 1/2 medium onion chopped
- 2 heaping tablespoon s tomato paste
- 1/2 teaspoon (3 ml) garlic powder
- 1/2 teaspoon (3 ml) chili powder
- 3 cup (720 ml) s beef broth
- 1 cup (240 ml) uncooked elb ow macaroni
- 2 cup (480 ml) s freshly grated cheddar cheese
- Salt & pepper to taste
Instructions
- Place the ground beef and chopped onions into a large pot. Cook over medium-high heat until the meat is browned, which should take about 7-10 minutes, making sure to break the meat apart with a spoon. Remove most of the excess fat if there is a lot of it.
- Mix in the tomato paste, garlic powder, and chili powder.
- Pour the beef broth into the pot and raise the temperature to high. Once it begins to boil, add the macaroni.
- Lower the heat to maintain a steady simmer. I cooked mine at medium heat. Allow it to cook uncovered until the pasta is soft and most of the liquid is absorbed, roughly 13-15 minutes, stirring every couple of minutes.
- While it cooks, shred the cheddar cheese to save time later.
- Remove the pot from the heat and blend in the cheese. Add salt and pepper to taste. I usually let it rest for a few minutes before serving to enhance the flavors, but it can be served immediately if preferred.
Notes
- Start by sautéing onions until soft before adding the beef for extra depth.
- Mix tomato paste with beef and onions for a minute to boost its flavor.
- Off the heat, gradually incorporate cheddar for a smooth, creamy consistency.
