Ingredients

  • 2 teaspoon (10 ml) s olive oil
  • 1/2 cup (120 ml) diced yellow onion
  • 1 1/4 teaspoon (6 ml) s chili powder
  • 1 teaspoon (5 ml) ground cumin
  • 1/4 teaspoon (1 ml) garlic powder
  • Kosher salt and fresh ground black pepper to taste
  • 2 cup (480 ml) s cooked shredded chicken breasts, or rotisserie chicken
  • 15 ounce (425 g) can black beans, rinsed and drained
  • 1 cup (240 ml) diced fire roasted green chiles
  • 2 tablespoon (30 ml) s chopped cilantro
  • 15 ounce (425 g) s green enchilada sauce
  • 5 corn tortillas cut into triangles
  • 1 cup (240 ml) shredded Monterey Jack cheese
  • Avocado, cilantro, and plain Greek yogurt or sour cream for garnish


Instructions

  1. Set your oven to 425°F for preheating. Slice the corn tortillas into triangular pieces.
  2. Warm up the olive oil in a large skillet that can go in the oven, on medium-high heat. Sauté the onion with the spices until the onion becomes tender.
  3. Reduce the heat to medium, then incorporate the shredded chicken, black beans, green chiles, cilantro, and green enchilada sauce. Season with salt and ground pepper. Mix all ingredients well, then add the tortilla pieces, stirring to ensure they are well-coated in the sauce.
  4. Sprinkle the shredded cheese on top and transfer the skillet into the oven. Cook for 10-15 minutes until the dish is bubbling and the cheese has melted.
  5. Take it out of the oven, and if you like, garnish with extra cilantro, avocado slices, and a dollop of sour cream or plain Greek yogurt.

Notes

  • For a healthier option, use whole wheat or corn tortillas in place of regular corn tortillas.
  • Add more heat by using hot green chiles or a pinch of cayenne pepper.
