Ingredients
- 1 lb ground beef (450 g)
- 1/2 cup chopped onion (120 ml)
- 2 cans (285 g) mild green chile enchilada sauce
- 1 packet (28 g) original taco seasoning mix
- 1 can (115 g) chopped green chiles
- 1 cup frozen corn (240 ml)
- 12 yellow corn tortillas (6 inch)
- 2 teaspoons vegetable oil (10 ml)
- 2 cups shredded Mexican 4-cheese blend (200 g)
- Chopped Roma tomatoes
- Chopped fresh cilantro leaves
- 1 container (200 g) crema Mexicana
Instructions
- Preheat your oven to 350°F and lightly coat a 13×9-inch glass baking dish with cooking spray.
- In a 10-inch nonstick skillet, brown the beef and onion over medium-high heat for 5 to 7 minutes, stirring often, until fully cooked. Drain the excess fat.
- Add 2/3 cup of the enchilada sauce, taco seasoning, green chiles, and frozen corn to the skillet. Bring the mixture to a boil.
- Lower the heat and let it simmer uncovered for 3 to 4 minutes, stirring regularly, until it thickens.
- Brush each side of the corn tortillas with a light coat of oil. Arrange four stacks of three tortillas each on a large, ungreased cookie sheet.
- Bake the tortillas for 3 to 5 minutes until they are warm and flexible. Take them out of the oven and cover with a clean kitchen towel to keep them warm.
- Quickly work with one tortilla at a time, placing it on your work surface. Put a generous tablespoon of cheese down the center of each tortilla.
- Add 1/4 cup of the beef mixture on top of the cheese. Carefully roll each tortilla tightly around the filling and place it seam side down in the baking dish, forming two rows.
- Repeat the filling and rolling process with the remaining tortillas. Pour the rest of the enchilada sauce over the enchiladas and sprinkle with the remaining cheese.
- Bake for 25 to 30 minutes or until the dish is hot and the cheese has melted. Allow it to sit for 5 minutes before serving.
- Garnish with chopped tomatoes, fresh cilantro, and crema Mexicana before serving.
