Description

A delightful grain-free meatloaf that fits Paleo and Keto lifestyles, rich in flavor and satisfying.


Ingredients

  • 2 lbs ground beef
  • 2 large eggs
  • 1 medium onion, diced
  • 5 cloves garlic, minced
  • 2 tbsp butter
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 tsp paprika
  • 1 pinch nutmeg
  • 1 tsp real salt
  • Fresh ground pepper to taste
  • 4-6 oz tomato paste
  • 1 tbsp raw honey
  • Ketchup (to taste)
  • Optional: 4 oz sharp cheddar cheese


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. Melt butter in a skillet over medium heat. Sauté onion and garlic until soft, about 3-5 minutes.
  3. In a large bowl, combine ground beef, sautéed onion and garlic, eggs, spices, tomato paste, honey, and ketchup.
  4. If using, mix in sharp cheddar cheese.
  5. Form the mixture into a loaf shape and place it in the prepared baking dish.
  6. Bake for 50-60 minutes or until cooked through and browned outside.
  7. Allow to rest for 10 minutes before slicing.

Notes

For extra flavor, glaze the top with a mixture of ketchup and honey during the last 15 minutes of baking. Bake on a wire rack for even cooking.
