A delightful grain-free meatloaf that fits Paleo and Keto lifestyles, rich in flavor and satisfying.
Ingredients
- 2 lbs ground beef
- 2 large eggs
- 1 medium onion, diced
- 5 cloves garlic, minced
- 2 tbsp butter
- 1 tsp onion powder
- 1 tsp garlic powder
- 2 tsp paprika
- 1 pinch nutmeg
- 1 tsp real salt
- Fresh ground pepper to taste
- 4-6 oz tomato paste
- 1 tbsp raw honey
- Ketchup (to taste)
- Optional: 4 oz sharp cheddar cheese
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking dish.
- Melt butter in a skillet over medium heat. Sauté onion and garlic until soft, about 3-5 minutes.
- In a large bowl, combine ground beef, sautéed onion and garlic, eggs, spices, tomato paste, honey, and ketchup.
- If using, mix in sharp cheddar cheese.
- Form the mixture into a loaf shape and place it in the prepared baking dish.
- Bake for 50-60 minutes or until cooked through and browned outside.
- Allow to rest for 10 minutes before slicing.
Notes
For extra flavor, glaze the top with a mixture of ketchup and honey during the last 15 minutes of baking. Bake on a wire rack for even cooking.
